Once upon a time, in my hometown, I worked as a waiter in the best restaurant in this place, and before I started working there, I had to memorize the entire menu, all the terms and fancy names of dishes and their components, unknown at that time. I still remember that Mozzarella is “unleavened cheese made from the milk of black buffaloes of the evening milking” :)

Of course, in Russia, ordinary cow’s milk is used in its production, but it also turns out delicious. By the way, I can tell you one super-budget analogue of Mozzarella, which also goes perfectly with tomatoes, just like the “original”. This is ordinary unleavened Adyghe cheese! To be honest, lately I’ve only been using it; I prefer the crumbly consistency and milky taste.

So, wash the tomatoes and basil. Cut the tomatoes into circles 0.5 cm thick. Drain the brine from the Mozzarella, blot it with a napkin and cut into circles of exactly the same thickness. We take the plates and lay them in half, for example, overlapping mugs of tomatoes and cheese, alternating them with each other.

That's all 🙂 All that remains is to put basil leaves on top, drizzle with olive oil and balsamic vinegar, pepper and salt if desired (I don’t add salt).   1. Tear the lettuce leaf mix with your hands and place on a wide plate.

Regular tomatoes are also not quite suitable for snacking - give preference to cherry tomatoes.

Ingredients:

  • cherry tomatoes – 12 pcs.;
  • arugula – 80-100 g;
  • cheese – 280 g;
  • olive oil – 80 ml;
  • balsamic vinegar – 1 tsp.

Cooking method:

  1. Many housewives cut mozzarella into cubes, disrupting its natural layering. You shouldn’t do this - divide the ball into fibers or, as a last resort, cut into circles.
  2. Cut small cherry tomatoes in half.
  3. Separate the arugula leaves from the stems.
  4. In a bowl, mix oil, vinegar, season with spices to taste, and add salt.
  5. Place vegetables, cheese in a deep plate, season with sauce, and add arugula leaves.

With sun-dried tomatoes

A typical product of Mediterranean cuisine is sun-dried tomatoes. You can buy them in canned form in supermarkets, or you can make them yourself. The recipe for salad with tomatoes and mozzarella does not contain expensive ingredients; it is perfect with pasta, fish, and seafood.

Ingredients:

  • mixed greens – 200 g;
  • soft cheese – 200 g;
  • sun-dried tomatoes – 150 g;
  • sweet onion – 1 pc.;
  • carrots – 150 g;
  • olive oil – 70 ml;
  • Italian herbs.

Cooking method:

  1. Rinse the lettuce leaves and dry them with a paper towel - they should be dry.
  2. Peel the carrots and grate them on a grater with medium holes.
  3. Cut large balls of cheese into circles; if they are small, you don’t have to chop them.
  4. Cut the onion into thin strips, squeeze lightly.
  5. Place a mixture of lettuce leaves, carrots, onions, cheese, and sun-dried tomatoes on a flat plate.
  6. Season the vegetable dish with spices and salt, pour over the sauce.

With olives

In winter, sometimes you really want something light, summery, and full of vitamins. This dish can be called a salad with mozzarella and olives. A wonderful tandem of tomatoes and spicy olives combines successfully with crispy iceberg leaves and the soft, creamy taste of cheese. Season the dish with aromatic sunflower or olive oil - they combine well with these products and highlight each other’s taste.

Ingredients:

  • soft cheese – 180 g;
  • sweet onion – 1 pc.;
  • iceberg - 1 head;
  • olives – 180 g;
  • tomatoes – 250 g;
  • vegetable oil – 80 ml;
  • balsamic vinegar - 1 tbsp. l.

Cooking method:

  1. Wash the iceberg, dry it, cut into medium cubes.
  2. Cut cherry tomatoes in half, large tomatoes into slices.
  3. Divide the soft cheese into fibers.
  4. Remove the pits from the olives and place them whole in a deep salad bowl.
  5. Cut the onion into thin rings.
  6. Mix all ingredients, season with vinegar, oil, add salt, Italian herbs, spices.
